Elk Chili

  • 2 pounds ground elk meat
  • ½ onion, grated
  • 2 teaspoons salt
  • 1 ½ quart tomato juice
  • 4 to 5 cans red beans
  • 1 ½ tablespoons chili powder 

Brown meat with onion. Add remaining ingredients. Simmer 1 to 1 ½ hours. Stir often to prevent sticking.
