Elk Chili

- 2 pounds ground elk meat
- ½ onion, grated
- 2 teaspoons salt
- 1 ½ quart tomato juice
- 4 to 5 cans red beans
- 1 ½ tablespoons chili powder
Brown meat with onion. Add remaining ingredients. Simmer 1 to 1 ½ hours. Stir often to prevent sticking.
